Homemade Vegan Basil Pesto

If you have a food processor, then homemade pesto is one of the easiest meals you can make! All you have to do if throw all of the ingredients together, mix, and serve! No cooking required at all.


This recipe only produces 2 servings, but you can really easily multiply it depending on how many mouths you have to feed. Plus, whilst many store-bought pestos contain cheese, this recipe is completely vegan! Serve it with pasta, on pizzas, or in wraps. This pesto really goes with anything!


Ingredients (serves 2)

  • 80g cashews

  • 30g fresh basil

  • 1 garlic clove

  • juice of 1 lemon

  • 6 tbsp olive oil

  • 2 tbsp nutritional yeast

  • Salt & pepper



Method:

  1. Start by peeling and mincing the garlic, and juicing the lemon.

  2. Add the cashews to the food processor and blitz for about 30 seconds until it reaches a chunky, powder-like consistency.

  3. Next, mix in all of the remaining ingredients and blitz for a further 30 seconds, until everything is combined and it reaches the desired consistency (if the mixture is too thick, add additional oil).

  4. Serve with pasta, in a wrap, on a pizza, or anywhere else that your heart desires!

  5. Enjoy!
