Quick & Easy Sundried Tomato Pesto

This super easy recipe only takes about 60 seconds to make. No preperation, no cooking necessary. Just throw all the ingredients in the food processor and you're finished - what could be easier?

This recipe is the perfect addition to any vegan mezze board, and is great as both a spread on breads, as a dip with something like vegetable sticks or tortilla chips, or can even be enjoyed as a pesto with pasta. Try combining it with my caramelised onion hummus, another great recipe which is guaranteed to compliment it perfectly.


Ingredients (serves 4)

  • 150g Sundried Tomatoes

  • 50g Cashews

  • 15g Fresh Basil

  • 3 tbsp Extra-virgin Olive Oil


Method:

  1. Measure all of the ingredients and add to a food proccessor.

  2. Blitz at a high speed for roughy 60 seconds until all ingredients are sufficiently combined and have formed a thick paste. If the paste is too thick, add additonal olive oil until it reaches the desired consistency.

  3. Transfer the mixture to a bowl and serve.

  4. Enjoy!
